Harvest Notes
This is the second release of our meritage blend, which is comprised of 4 out of the 6 Bordeaux grapes. The last of the grapes to be picked for the 2008 harvest, the Cabernet Sauvignon, was harvested in late October and the first few days of November. All parcels of fruit used in this blend were grown in the South Okanagan.
Winemaking
Each parcel of fruit was processed and vinified separately. The grapes are picked, then sorted whole cluster, destemmed and sorted whole berry. The fruit is then transferred to a tank or bin to cold soak for 4 – 7 days. The must in then inoculated with a yeast strain that is carefully chosen and ferments for 1 to 2 weeks. After fermentation is complete, the must is pressed and the free run wine is kept separate from the pressings. After pressings, the wines went into the finest oak and were aged separately until a final blend was determined.
