Harvest Notes

Due to a cold spring, the 2008 harvest began two weeks later than the previous vintage. The Swear to God is comprised of 100% estate grown Chardonnay, which was handpicked in the cool days of mid-October.

Winemaking

After the Chardonnay from our upper block was harvested, the fruit underwent a process that involved sorting pre and post de-stemming and then proceeding with a whole berry press, instead of leaving the Chardonnay on the stems while pressing. After pressing, the juice was left to settle for several days before being warmed, racked and inoculated into 100% French oak barrels. As a result, the Chardonnay was 100% barrel fermented. The Chardonnay was left in wood for 16 months and then transferred to tank to await bottling.
