Palate: Hearty, full flavoured.
Food Pairings: The juicy fruit flavours and soft tannins allow for a variety of meal pairings. 2011 Big Bang Theory would be at home with roast chicken or pork, bbq ribs or tomato based pasta sauces. Or try with fresh grilled sockeye with a soy, maple glaze or marinated grilled flank steak.

Harvest Notes

A total of 7 different varietals are used to make up this blend. Each variety lends a characteristic and nuance to the wine. Harvest pick dates ranged from late September to the end of November.

Winemaking

Each of the varieties are harvested and vinted separately. The goal is to always bring out the best flavours and colours from each variety. The Merlot is allowed to stay on skins longer and the Pinot Noir for a shorter period of time. All wines completed Malolactic fermentation and most were in barrique barrels for 8 months.
