Harvest Notes

Only the second release of this 100% Petit Verdot wine from Blasted Church Vineyards. Plantings of Petit Verdot are rare in the Okanagan Valley. The variety ripens late in the season, normally mid to end of October. These grapes came from a premium grower in the Osoyoos area.

Winemaking

The grapes are hand harvested and destemmed only into small fermentors. The punch down on the skins begins after a 4 day cold soak. A lot of whole berries remain; these berries are gently broken open through hand punch downs of the cap which occurs twice daily. Over a period of 14 -21 days the yeast converts the sugar into alcohol and extracts the tannins. After this phase the wine is pressed off the skins and is barreled down to complete malolactic fermentation in predominantly new French oak barrels. The wine is allowed to age in the barrel for a full 24 months prior to racking and bottling.
