The 2010 Syrah is harvested from our own vineyards as well as a number of other vineyards located in Oliver and Osoyoos. Syrah is a late ripening variety in the Okanagan Valley. Harvesting normally commences mid to late October.
After a cold soak of 24 hours at 4 degrees Celsius the must was warmed up and inoculated with yeast. Some lots were fermented in small fermentation bins with manual punch downs twice daily. Other lots were tank fermented and skins were pumped over the cap two to three times daily. Pressing was done at dryness and after a short settling period the wines were barreled down into French and American barrique barrels. The wine spent 16 months in oak prior to bottling. In this vintage a small amount of Viognier was added to lift the palate and provide extra fruit flavours.
