The 2016 growing season jumped off to a fast start, and it was all the vineyard team could do to keep up with the rapidly growing vines. Thankfully, the season steadied with a cooler than usual July, which allowed for a longer hang time on the grapes to allow the flavours to develop while maintaining a bracing acidity in the fruit. The Viognier portion of this wine, harvested on September 29th, came from the Crespo vineyard in Osoyoos, managed by the Dhaliwal brothers. The Roussanne, grown by the Parkers, came from Oliver, and was harvested on October 19th.
Both the Viognier and the Roussanne were hand harvested and brought into the winery where they were destemmed before being pressed to tank. After settling for 24 hours, the juice was racked into second fill French oak barrels for fermentation. The lees were stirred periodically for the first six months to help increase the mouthfeel of the wine. After 8 months in barrel, the Viognier and Roussanne components were blended together in tank before being put back to barrel for the final 3 months before bottling.
