Bouquet: Guava, melon, banana, caramel, gooseberry, sweet oak and hints of grapefruit. Palate: Guava and melon with vanilla oak and caramel finishing with lemon, cream and spice. Not true to varietal, but very heavenly! Food Pairings: Chicken, pasta or pork with rich cream sauces; flavourful cheeses.

Harvest Notes

The sunshine and hot growing season of 2015 resulted in some unusual grape characteristics; the Viognier never developed its signature peach flavours. It was harvested on the 18th of Sept at 24 Brix from a single vineyard in Osoyoos. The atypical flavours alone allowed our winemaker to create a small-lot, high-end Revered Series wine.


The grapes were treated in two separate ways before heading to barrel for ferment: Half was destemmed into a stainless steel tank where the free run juice was collected and inoculated with yeast before being barreled down. The other half was destemmed into a bin for skin contact for 12 hours before being pressed, then the juice was settled, racked and inoculated before being barreled down. Both ferments carried on separately in barrel for a week, then aged on lees for 8 months with weekly batonnage occurring in the first 3 months only. The wine was then racked out of barrel, blended together and stored in barrels again for another month to let the different styles marry. The wine saw 100% French oak, half of which was 1st fill and half was 4th fill. None of the wine went through malolactic fermentation.
