Bouquet: Dried cranberry, red currant and cherry, slightly herbaceous with subtle oak.
Palate: Bright red plums, cranberries, cherry with a hint of tomato leaf and a slight mint and cedar finish.
Food Pairings: Pizza, pasta, BBQ.

This year the Big Bang Theory is made up of six different varietals. Each variety lends a unique characteristic and nuance to the wine. The varieties, in descending order, are Merlot, Malbec, Cabernet Sauvignon, Pinot Noir, Lemberger, and Syrah. Harvest dates ranged from September 23rd to October 16th with an average Brix of 24.9.
Each of the varieties are hand harvested and vinified separately. The goal is to bring out the best flavours and characteristic of each variety. The Lemberger and Pinot Noir stayed on skins for a short period of time, whereas the Merlot, Malbec and Cabernet Sauvignon stayed on skins longer. All wines are fermented in stainless steel tanks on untoasted oak chips to add structure and protect colour before they complete Malolactic fermentation and are aged on oak.
