Our 2015 Cross to Bear was sourced from two vineyard blocks. The first block, Jose vineyard in Osoyoos, farmed by the Dhaliwal Brothers, and the second block from our estate vineyard in Okanagan Falls. The southern location of the Jose vineyard contributed extra length to the growing season as well as slightly higher temperatures than the rest of the Okanagan Valley, allowing for the Cabernet Sauvignon to reach full physiological ripeness. The more central location of our estate vineyard allowed us to push hang times without the risk of elevated sugar levels in the fruit, contributing great structure and balance to the blend without bringing excessive alcohol levels.
The fruit was hand harvested and brought to the winery where it was destemmed into tank without crushing. After a five day cold soak, during which time the juice was pumped over once daily, fermentation kicked off and pump overs were increased to two or three times daily, depending on the needs of the fermentation. Once fermentation was complete, the wine was left on skins for a week of post-fermentation maceration before being drained and pressed into French oak barrels, of which 75% was new. The wine was aged in barrel for 22 months before being racked out and into tank in preparation for bottling - unfined and unfiltered.
