The 2016 Gewurztraminer was harvested from 100% Estate grown fruit. Due to the long growing season, the fruit was harvested at 2 different times for flavour development.
Some of the fruit saw skin contact before pressing, then the juice was then settled, racked and inoculated. The second harvest was de-stemmed and pressed without skin contact. It was settled, racked, inoculated and fermented similar to the first picking, however, the ferment was stopped early to leave some residual sugar. The two tanks were blended together 3 months prior to filtering and bottling.
