Bouquet: White peaches and blossoms with a hint of honeydew melon.
Palate: Similar flavours to the bouquet are present on the palate with a creamy mouth feel.
Food Pairings: A versatile wine that would pair nicely with salmon, chicken or pork.

Harvest Notes

The 2016 vintage sees the Viognier grape highlighted once again in the Mixed Blessings. Due to the lovely long growing season, we decided to pick the Viognier at four different times. The first pick was to maximize the acid levels in the grapes while the second, third and fourth picks were based on flavour and ripeness.

Winemaking

All harvests were vinified separately. The first harvest was de-stemmed then directly pressed to tank. The second harvest saw partial skin contact before pressing. The third and fourth harvest went straight to press. All four Viognier tanks were allowed to stabilize until January, when they were blended together. They were aged in tank for 3 more months before filtering and bottling.
