Bouquet: Apple, pear, mineral, almonds.
Palate: Crisp apple and pear with some nutty yeasty characteristics rounding out the bright finish.

The grapes from each vineyard were fermented separately and blended weeks prior to bottling. The Pinot Noir was destemmed then quickly pressed which created a small amount of colour that can be seen in the final product. The Pinot Noir added the berry fruit component to the wine. The Chardonnay added orchard fruits and tropical flavours and Pinot Blanc added the acid structure and balance to the wine. Our sparkling wine was made using the traditional method of re-fermenting the wine in the bottle followed by riddling and disgorging.
The 2012 Vintage was a classic one for sparkling wine. Cool days and cold nights in September led to solid acids and pronounced fruit development in the grapes. This was true for all three varieties used in this blend: Pinot Noir, Chardonnay and Pinot Blanc.
