Half the fruit saw skin contact for 2 hours under gas protection, then pressed with the remainder of the fruit under gas and tannin protection - to prevent oxidation of the juice. Clear juice was racked off lees after 48hrs, again under gas protection, to fill a stainless steel tank in addition to three-year old French and American hybrid oak barrels. The tank juice was inoculated with special yeast that releases the fruitiness of the grapes. The barrels were inoculated sequentially first with a yeast that improves the body and rounds out the mouthfeel of the wine, and then 48 hours later with yeast to accentuate the aromatics. The tank fermented slow and cold while the barrels were a bit warmer. None of the wine underwent malolactic fermentation and the barrels remained on lees for 4 months before being blended back into the tank wine where it was filtered and bottled.
The 2015 Sauvignon Blanc grapes were hand harvested from our own Estate Vineyard. Weather conditions allowed us to hang the fruit while developing flavor ripeness, well after sugar ripeness. The Sauvignon Blanc was one of the last whites we harvested at the end of September when the Brix were 24.5. The fruit quality was excellent and the intensity of flavours superb.
