Bouquet: Guava, pineapple, and melon with green grass, tomato leaf and lemon.
Palate: Tropical fruits with grassy characteristics backed up by lemon notes.
Food Pairings: Seafood and creamy white sauce dishes.

The 2016 Sauvignon Blanc grapes were hand harvested from our own Estate Vineyard in two different harvests. The first pick provided lovely grassy characters while the second pick provided tropical flavours - both adding to the complexity of the wine.
The first harvest was whole cluster pressed into tank and settled. It was then racked into new French Oak barrels and inoculated. The second harvest of fruit saw some skin contact in the press for a couple of hours then pressed into tank, settled, racked and inoculated. The juice fermented at a cool temperature in tank for almost a month. After, the barrel fermented wine was added to the tank fermented wine to make a lovely, complex blend. The barrel wine brings mouthfeel and weight and green notes while the tank brings the bright acidity, tropical fruits and refreshing finish.
