Swear to God - Chardonnay 2015

Bouquet: Lemon curd, vanilla oak, caramel, with hints of pear and peach.
Palate: Creamy vanilla oak with caramel notes, pear, peach and spice.
Food Pairings: Roast chicken or turkey, pasta with a cream sauce, cheese and crackers or smoked salmon.

The Chardonnay was destemmed with no skin contact to maintain its acidity. Juice was racked into barrel where it went through a sequential inoculation. We started Torulaspora delbrueckii yeast for the first three days and then inoculated with Saccharomyces cerevisiae. This method provides complexity to the wine and mimics more of a wild ferment. The wine was aged on the yeast lees and was stirred once a week to increase mouthfeel. The lees stirring (battonage) lasted for three months followed by the wine sitting on the lees for another five months. Two of the five barrels also underwent malolactic conversion. The barrels were then racked off and the wine aged in clean barrels for another month before it was bottled (coarse filtered only). It saw 66% French oak (40% 1st fill), and 34% American oak (3rd fill and older).
Produced only in exceptional years, the 2015 Swear to God is 100% Estate grown Chardonnay! Due to the hot growing season, leaf removal was limited, however the grapes still ripened quickly. Any disease damage was removed in the vineyard so no sorting was required in the cellar. The fruit was hand harvested on Sept 11th at 23 Brix with a TA of 9.2 and a pH of 3.29.
