The 2016 growing season jumped off to a fast start, and it was all the vineyard team could do to keep up with the rapidly growing vines. Thankfully, the season steadied with a cooler than usual July, which allowed for a longer hang time on the grapes to allow the flavours to develop while maintaining a bracing acidity in the fruit. Our estate grown Chardonnay was hand harvested on September 20 at 22.7° Brix, 9.03g/L TA, and pH 3.19.
On September 20, the fruit was hand harvested and brought into the winery where it was destemmed before being pressed to tank. After settling for 24 hours, the juice was racked into six French oak barrels for fermentation, of which 17% was new. After fermentation, two of the barrels were racked into stainless steel for the aging period to build the tension in the wine. Partial malolactic fermentation helped to round out the profile while also maintaining the bright acidity to ensure a lively, fresh, and vibrant wine. The lees were stirred periodically for the first six months in barrel to help increase the mouthfeel of the wine. The wine remained on its lees for 11 months before being racked in preparation for bottling.
